After Turkey Day is over, get creative and transform what’s left of Thanksgiving dinner into healthy meals that will nourish you and your family while cutting down on food waste. Here are a few basic ideas to get you started.

Turkey and vegetable soup

Use leftover turkey, roasted vegetables and broth to make a nutrient-packed soup. Add leafy greens like spinach or kale for extra vitamins.

Turkey and sweet potato lettuce wraps

Shred leftover turkey and roasted sweet potatoes, and use large lettuce leaves as wraps. Add a dollop of hummus or avocado for healthy fats.

Cranberry sauce smoothie

Blend leftover cranberry sauce with Greek yogurt, a banana and a handful of spinach for a refreshing post-holiday smoothie.

Sweet potato breakfast hash

Dice leftover sweet potatoes and sauté them with onions, bell peppers and lean turkey sausage or turkey meat. Top with a fried egg for a hearty breakfast.

Cauliflower mashed potato shepherd’s pie

Replace traditional mashed potatoes with mashed cauliflower and layer it over leftover turkey and veggies for a lower-carb shepherd’s pie.

Cranberry and yogurt parfait

Layer leftover cranberry sauce with plain Greek yogurt, oats and a sprinkle of nuts or seeds for a healthy breakfast parfait.

If you play your cards right, and make healthy choices, Thanksgiving dinner can last all week!
