Pepper Steak and Cabbage

Quick and easy, this delectable stir-fry makes for a healthy and tasty meal.

Serves 8

Ingredients

  • 1 lb. steak (I like sirloin, flank or skirt steak for this)
  • salt and pepper
  • 1/4 tsp. red pepper flakes
  • 3 tbsp. olive oil
  • 1 head of cabbage
  • 1 medium red bell pepper
  • 2 tbsp. low-sodium soy sauce

Instructions

  1. Slice the steak into thin strips. Season with salt, pepper and red pepper flakes.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add meat and cook until brown, about 5 minutes.
  3. While the meat is browning, chop the cabbage and slice the bell pepper into strips. Remove browned meat from the skillet and set aside. Add the remaining 2 tablespoons of olive oil, the cabbage and the pepper strips to the skillet and sauté until the cabbage and peppers are wilted and slightly charred, about 10 minutes.
  4. Return the meat to the pan, stir in the soy sauce and cook 1–2 minutes.
  5. Season to taste with salt and black pepper. Enjoy!
