Collard Greens Pesto

Ingredients

  • 2 cups packed collard greens, stems removed
  • ½ cup packed fresh basil
  • ½ cup walnuts OR pine nuts
  • ½ cup freshly grated Parmesan cheese
  • ½ cup extra virgin olive oil
  • 6 garlic cloves
  • 1 tsp. salt
  • 1 tsp. freshly ground black pepper
  • 2 tbsp. lemon juice

Instructions

  1. Combine all ingredients in a food processor and mix until mostly smooth.
