
This healthy treat is full of juicy, fresh flavor, easy to make, and the perfect way to cool off this summer.
Makes about 10 popsicles
Ingredients
- 3 cups cubed watermelon
- 1 cup chopped strawberries (or peaches)
- juice and zest of 1 lime
- 1 cup diced kiwi
- 1/4 cup blueberries
- 1 cup coconut milk
Instructions
- In a food processor or blender, puree watermelon, strawberries or peaches and lime zest and juice. Set aside.
- Puree the kiwi and set aside.
- Pour watermelon puree and blueberries into popsicle molds two-thirds full. Freeze this layer for 30 minutes.
- Next pour in coconut milk and freeze for another 30 minutes. Be sure to leave enough room for your kiwi puree.
- Finally, pour in the kiwi puree, add your sticks or base, and cover and freeze for 5 hours or overnight.
- Enjoy when ready! If you’re having trouble removing the popsicles from their molds, run them under warm running water until loosened.
