
Start a new tradition with this savory family favorite, a low-carb option to classic dirty rice.
Serves 4
Ingredients
- 2 tbsp. olive oil
- 1 lb. ground chicken
- 1/2 cup celery, medium dice
- 1 cup bell pepper, medium dice
- 1 cup onion, medium dice
- 4 garlic cloves
- 1 tbsp. Cajun seasoning
- 1 12-oz. bag frozen cauliflower rice
- 1/4 cup low-sodium chicken stock
- salt and pepper
- green onion and parsley (optional)
Instructions
- Preheat a cast iron skillet over medium-high heat. Add the olive oil and the ground meat. Brown the meat, breaking it apart with a spoon until it begins to brown and caramelize, about 8–10 minutes.
- Reduce the heat to medium, add the celery, bell pepper and onion and cook until the veggies are tender, about 5 minutes.
- Add the garlic and Cajun seasoning. Cook for another minute.
- Add the rice and stock and season with salt and pepper. Stir to combine, scraping up any bits stuck to the bottom of the pan. This will give the cauliflower rice its “dirty” look.
- Continue to cook, stirring often, until the cauliflower rice is tender and there’s no liquid left in the pan.
- Taste and season with salt and pepper if needed. Garnish with chopped green onion and parsley if desired.
