This simple salad combines the bold flavors of citrus and creamy mozzarella for a fresh bite you can enjoy any time of year, even bringing a touch of sunshine to the winter months.
Ingredients
- 1 shallot, thinly sliced
- 2 tbsp. fresh lemon juice
- 8 oz. fresh mozzarella
- 2 small oranges, peeled and sliced
- 4 cups arugula or any other leafy green
- salt and pepper to taste
- extra virgin olive oil, for drizzling
Instructions
- Marinate the shallots in the lemon juice for 10 minutes to remove their bite.
- Cut or tear mozzarella into bite-size pieces.
- Toss the shallots, mozzarella, oranges and greens in a salad bowl and drizzle with olive oil.
- Enjoy!
