No Bake Low-Carb Strawberry Cheesecake 

Get your taste buds ready for a no-bake strawberry delight that’s low in carbs, super easy to prepare and loaded with flavor.

Ingredients

The Crust:

  • 1 cup pecans 
  • 1 cup almonds
  • 2 tbsp. butter
  • 2 tbsp. monk fruit sugar or any sugar alternative 

The Filling:

  • 1 package cream cheese
  • 1/2 cup evaporated milk
  • 4 tbsp. zero calorie confectioners’ sugar 
  • 2 cups zero sugar whipped cream
  • 1 tbsp. Greek yogurt
  • 2 cups strawberries, chopped
  • fun toppings of your choice, such as blackberries, strawberries, cocoa powder, shaved dark chocolate

Instructions

For The Crust:

  1. Crumble nuts into small bits in a food processor or put them in a bag and smash them with a rolling pin.
  2. Melt butter.
  3. Combine butter, nut mixture, and monk fruit sugar in a bowl.
  4. Using your hands, press the mixture into the bottom and sides of a 9” x 7” baking dish to make a crust. Refrigerate 30 minutes.

For The Filling:

  1. Mix all ingredients except strawberries with a hand mixer until fluffy and smooth.
  2. Add strawberries. Combine with a hand mixer until the filling turns slightly pink.

To Assemble:

  1. Pour filling on top of the chilled nutty crust.
  2. Garnish with toppings.
  3. Chill overnight or for 2–hours.
