
Get your taste buds ready for a no-bake strawberry delight that’s low in carbs, super easy to prepare and loaded with flavor.
Ingredients
The Crust:
- 1 cup pecans
- 1 cup almonds
- 2 tbsp. butter
- 2 tbsp. monk fruit sugar or any sugar alternative
The Filling:
- 1 package cream cheese
- 1/2 cup evaporated milk
- 4 tbsp. zero calorie confectioners’ sugar
- 2 cups zero sugar whipped cream
- 1 tbsp. Greek yogurt
- 2 cups strawberries, chopped
- fun toppings of your choice, such as blackberries, strawberries, cocoa powder, shaved dark chocolate
Instructions
For The Crust:
- Crumble nuts into small bits in a food processor or put them in a bag and smash them with a rolling pin.
- Melt butter.
- Combine butter, nut mixture, and monk fruit sugar in a bowl.
- Using your hands, press the mixture into the bottom and sides of a 9” x 7” baking dish to make a crust. Refrigerate 30 minutes.
For The Filling:
- Mix all ingredients except strawberries with a hand mixer until fluffy and smooth.
- Add strawberries. Combine with a hand mixer until the filling turns slightly pink.
To Assemble:
- Pour filling on top of the chilled nutty crust.
- Garnish with toppings.
- Chill overnight or for 2–hours.
