
Velvety, smooth and delicious, this creamy, savory and healthy soup is perfect on a cozy night in.
Ingredients
- 2 tbsp. olive oil
- 4 red apples, cored, seeded, peeled and roughly chopped
- 1 medium onion, medium dice
- 15 oz. can pumpkin puree
- 1/4 cup monk fruit sweetener
- 2 tsp. cinnamon
- 1/3 tsp. nutmeg
- 3 cups coconut milk
- 1 cup veggie stock
- salt and pepper to taste
Instructions
- Heat oil in a heavy-bottomed soup pot over medium-high heat. Then add apples and onions.
- Sauté for 5–7 minutes until onions are translucent but not brown.
- Add pumpkin, sweetener, cinnamon and nutmeg. Cook 5 minutes, stirring frequently.
- Slowly add coconut milk to the pumpkin-apple mixture, stirring until incorporated. Then add the veggie stock.
- Bring to a boil and then reduce heat.
- Simmer 30–40 minutes or until the soup is thickened to your liking.
- Season with salt and pepper and enjoy.
