Watermelon-Strawberry Popsicles

This healthy treat is full of juicy, fresh flavor, easy to make, and the perfect way to cool off this summer.

Makes about 10 popsicles

Ingredients

  • 3 cups cubed watermelon
  • 1 cup chopped strawberries (or peaches)
  • juice and zest of 1 lime
  • 1 cup diced kiwi
  • 1/4 cup blueberries
  • 1 cup coconut milk

Instructions

  1. In a food processor or blender, puree watermelon, strawberries or peaches and lime zest and juice. Set aside.
  2. Puree the kiwi and set aside.
  3. Pour watermelon puree and blueberries into popsicle molds two-thirds full. Freeze this layer for 30 minutes.
  4. Next pour in coconut milk and freeze for another 30 minutes. Be sure to leave enough room for your kiwi puree.
  5. Finally, pour in the kiwi puree, add your sticks or base, and cover and freeze for 5 hours or overnight.
  6. Enjoy when ready! If you’re having trouble removing the popsicles from their molds, run them under warm running water until loosened.
