A true Mobile original! Serve this light, fresh Alabama classic as a lettuce topper or with your favorite healthy crackers or chips.
Makes 1 lb.
Ingredients
- 1 lb. sweet onion, small dice
- 1 lb. crabmeat (your choice of lump or claw meat; claw meat is usually less expensive), picked through to make sure all bits of shell are removed
- 1/2 cup ice water
- 1/2 cup vegetable oil
- 1/4 cup + 2 tbsp. apple cider vinegar
- 2 tsp. sugar substitute
- zest and juice of 2 lemons
- salt and pepper to taste
Instructions
- Spread half the onions over the bottom of a medium-to-large bowl or container.
- Cover onions with all the crabmeat, then add remaining onions.
- Combine water, oil, vinegar, sugar substitute and lemon juice/zest in a separate bowl and pour over the crab/onion mixture.
- Cover and marinate in the fridge for anywhere from 6 to 24 hours.
- Once it’s done marinating, stir your mixture together, then drain off all the excess liquid.
- Season with salt and pepper and enjoy!
