Makes 1 lb.

Ingredients

  • 1 lb. sweet onion, small dice
  • 1 lb. crabmeat (your choice of lump or claw meat; claw meat is usually less expensive), picked through to make sure all bits of shell are removed
  • 1/2 cup ice water
  • 1/2 cup vegetable oil
  • 1/4 cup + 2 tbsp. apple cider vinegar
  • 2 tsp. sugar substitute
  • zest and juice of 2 lemons
  • salt and pepper to taste

Instructions

  1. Spread half the onions over the bottom of a medium-to-large bowl or container.
  2. Cover onions with all the crabmeat, then add remaining onions.
  3. Combine water, oil, vinegar, sugar substitute and lemon juice/zest in a separate bowl and pour over the crab/onion mixture.
  4. Cover and marinate in the fridge for anywhere from 6 to 24 hours.
  5. Once it’s done marinating, stir your mixture together, then drain off all the excess liquid.
  6. Season with salt and pepper and enjoy!
