1/2 medium green cabbage, cut into 4 wedges, cut out core
1 Tbsp extra-virgin olive oil
Salt and freshly ground pepper
1. Preheat oven to 450 degrees. Coat large baking sheet with cooking spray.. Place wedges flat-side down on prepared baking sheet.
2. Drizzle cabbage wedges with olive oil, sprinkle with salt and pepper.
3. Roast for 12 minutes.
4. Carefully flip wedges over and roast until brown on both sides, 8 more minutes.
2 tsp Dijon mustard
2 tsp white wine vinegar
1 tsp lemon juice
1/4 tsp freshly ground pepper
1/8 tsp salt
3 Tbsp minced fresh chives
2 tsp extra-virgin olive oil
1. In a small bowl, add all ingredients and whisk until combined. Transfer hot cabbage to plate, drizzle with vinaigrette.
Per 1/4 head serving with dressing
