Zucchini & Squash

(Serves 4)

Ingredients

2 medium yellow squash, thinly sliced
2 medium zucchini, thinly sliced
1/2 bell pepper, sliced
6 green onions cut in 1-inch pieces
1/4 teaspoon salt
2 cloves garlic, minced
non-stick cooking spray

Directions

  1. Spray skillet with non-stick cooking spray.
  2. Put vegetables in skillet and add spices.
  3. Cover tightly and cook for 3-5 minutes over low heat.
  4. Uncover, stir mixture, and cook for 10 minutes.
