Summer Fruit Salad with Poppyseed Dressing

Prep Time: 10 minutes, Cook Time: 30 minutes, Serves: 4-6

Salad Ingredients
1 head of butter lettuce
Fresh blueberries, washed
Bite-sized chunks of seeded watermelon
Bite-sized chunks of seeded cantaloupe
Fresh strawberries, washed and halved

Directions
1. Chill fresh fruit. Arrange lettuce leaves on plate or salad bowl. Add fruit and drizzle with dressing.

for Poppyseed Dressing
2 Tbsp + 2 tsp of cider vinegar
1/2 cup fresh honey
1 tsp dry mustard
1/3 cup vegetable oil
Pinch of salt
1 Tbsp poppy seeds
2 Tbsp fresh-squeezed lemon juice

Directions
1. In a small bowl, add all ingredients for dressing and whisk together. Chill before using. Dressing stores several days refrigerated; stir before use.
